Apple Crisp



Pretty quick, pretty easy, and the only apple crisp recipe I use. A delicious addition is to sprinkle in boysenberries or blueberries (fresh or frozen) with the apples for a mixed fruit crisp!


Topping:

1 c flour (whole wheat pastry flour works well here)
3/4 c rolled oats
1 c packed brown sugar (or use ½ brown sugar & ½ Splenda or erythritol)
1 tsp cinnamon
3/4 c butter, softened

-In mixing bowl combine first 5 ingredients.
-Cut in butter til crumbly. Set aside.

Filling:

½ c splenda (or erythritol)
2 TB  arrowroot powder (or cornstarch)
1 c apple juice
6 c chopped peeled apples

-In saucepan, combine sweetener, arrowroot powder, & juice; cook & stir til thickened & clear.
-Place apples in 9" square baking dish.
-Pour thickened juice over apples.
-Sprinkle with just half the topping (reserve half in sealed container in fridge or freezer for another time).
-Bake @ 350º for 1 hr or til apples are tender (placing foil under rack if crisp starts to bubble over).
-Serve warm w/ice cream if desired.

Yield: 8 servings.
