Grilled Lemon Pepper Pork Chops/Chicken


Marinade:
½  c water
  c soy sauce (I use Kikkoman low sodium)
  1 TB oil (olive is great!)
  3 TB lemon pepper (or less, to taste)
  tsp (or to taste) garlic granules -or- 1-2 minced garlic cloves (or to taste)

6-8 pork loin chops*, fat removed (1" thick is good)

1. In deep bowl mix marinade ingredients (or use ziplock bag)
2. Add meat & marinate, refrigerated, 2-8 hours
3. Bring meat to almost room temperature before grilling so it will cook more evenly. Remove from marinade; cook over medium heat on greased grill (if desired) 5-7 minutes per side, or til done. Can be broiled instead if desired.

*  Can be made with boneless/skinless chicken breasts or thighs, too!

Pork or chicken, this grilled meat is terrific refrigerated and sliced thin the next day to serve cold or re-warmed in tortilla wraps with cream cheese, roasted red peppers, chopped cabbage, cilantro, green onion, and a bit of grated cheese of your choice.
