This tasty sea 'vegetable' sample & 'salsa' was offered at the Kapolei, Hawai'i Costco. Pricey, yes, but so tasty ..and with me having troubles getting enough fresh green foods in my diet I splurged & bought a pound of it to take home & make some myself!
The sea asparagus, also known as sea beans, glasswort or samphire, is an excellent source of vitamins A, B2, B9( Folic Acid), C, Iron, and Calcium, it is also loaded with Dietary Fiber, Amino Acids, Minerals, and TMG, a super antioxidant that metabolizes homocysteine, an FDA approved treatment for cardiovascular disease.
Crisp, naturally salty, full of vitamins & minerals & so satisfying when tossed with crumbled tortillas chips. I love eating it from a bowl with a spoon! Excellent snack, salad, side dish.. No added salt or dressing required!
Ingredients
- 4 oz fresh, raw sea asparagus
- 4 oz fresh diced tomatoes
- 1 small green onion (mostly tops) snipped fine
Directions
Place sea asparagus in boiling water for about 30 seconds, drain, and plunge blanched greens in ice water til completely cooled. Drain & place in bowl.
With scissors, snip through greens until they're about 1 inch pieces. Soak in cold water 1 hour or longer to reduce salt content. Drain.
Mix with remainder of ingredients, chill in fridge 1 hour (or overnight) before serving for flavors to meld.
Variations:
Replace onion w/diced cucumber (or in addition to original recipe)
Add splash of olive oil
Add dried or cooked shrimp
Use fresh sea asparagus w/o blanching.
